My mom made the best soups and she spend a lot of time to make it tasty and unique. When she knew I was coming to visit her, she spend the whole day in the kitchen to surprise me, even when she was very sick. Her love for this part of the kitchen rubbed of to me and today its is my favorite dish to make. Some soups will take me days to make just to have the right broth and taste. Soups I can never plan way ahead, it has to come up to me and what kind of mood I am. Inspiration comes from shops or farmersmarkets I visit or from ingredients which inspire me. Some soups are classics and you respect the creator by leaving it alone and try the best to replicate it with all the effords it took that person to come up with that soup.
